Upside-Down Caramel Apple Pie Recipe

PAM cooking spray
6 Tbsp melted butter, divided
1/2 c packed brown sugar
1/2 c chopped pecans
1 pkg pie crusts
5 tart apples (like granny smith or pink lady)
1 c sugar
1/3 c flour
3/4 tsp cinnamon
1 tbsp lemon juice
1 tsp vanilla

1. Preheat oven to 375*. Coat a deep-dish pie pan with PAM and line with wax paper. Spray wax paper with PAM.
2. In small bowl, combine 4 Tbsp butter, brown sugar, and pecans; mix well and spread evenly over wax paper. Unroll 1 pie crust and place over brown sugar mixture, press crust firmly over mixture.
3. Peel, core, slice, and dice apples and place in large bowl. Add sugar, flour, cinnamon, lemon juice, and vanilla; mix well. Spoon mixture into pie crust.
4. Unroll second crust and place over apple mixture. Crimp edges of crusts together. Cut slits in top of pie crust. Place pie pan on cookie sheet to catch any spills as it cooks.
5. Bake 1 hr - 1 hr 15 min, until crust is golden.
6. When pie is done, pull out of oven and place serving plate over top of pie. Turn pie and serving plate over so that pie is upside-down on plate. Carefully remove wax paper. Allow to cool slightly and serve warm with vanilla ice cream.
