1 medium cauliflower
1/4 cup butter
1 medium onion, finely chopped
2 tbsp flour
2 cups chicken broth
2 cups light cream or milk
1/2 tsp Worcestershire Sauce
1 cup any grated cheese

Directions:
Directions:
Cut cauliflower into tiny flowerets. Place in a saucepan with 2 cups of boiling water, cover and boil 10 min. or until tender. Drain and reserve liquid. Melt butter, add onion and simmer until soft. Blend in flour, then add chicken broth and stir over medium heat until sauce is creamy. Stir in 1 cup of cauliflower liquid, the cream or milk and worchestershire. Add cauliflower and bring to a boil while stirring. Remove from heat and stir in cheese.

When adding the cauliflower, I usually mash them in as it makes the soup thicker and less chunky.
