1 lb chicken
1 lb chorizo
1 can evaporated milk
1 can corn
1 pkg corn tortillas
1 pkg shredded cheese

Directions:
Directions:
Season the chicken fajita style. Cube and brown the chicken and chorizo. Line a 9 X 13 baking dish with tortillas, spread chicken, chorizo. Put corn with juice and all on top of meat. Top with cheese. Equally apply the evaporated milk to the casserole. Top remaining tortillas. Pop that sucker in the oven for about 40-45 minutes- its done when it is not runny anymore!

Crumbly chorizo works best. Mexican or taco flavored cheese is also a nice touch. The casserole is even better the next day:)
