2 Tblsp margarine or butter
1 mediun onion, chopped
6 large eggs
2 cups 1 % milk
3 Tblsp dill
1/2 tsp lemon
1/4 tsp salt
1/4 tsp coarse black pepper
1 pkg chopped spinach
4 oz feta
8 slices firm white bread
lemon peel
green onions

Directions:
Directions:
Preheat oven to 350º. Saute onion in butter for 10 minutes. Beat eggs, milk, lemon peel, salt and pepper. Stir in onion, spinach, and cheese. Gently stir in bread. Pour in skillet. Let stand for 15 minutes. Cook mix at high heat without stirring or until mixture begins to set around edge. Bake 20-25 minutes or until knife inserted in middle comes out clean. Serve with rice. Sprinkle with green onions
