2 bunches collard greens, rinsed and cut into strips (should yield about 4-6 cups)
8 strips bacon, diced
1/2 cuped onion, diced
1/2 cup water
1 Tbl. basalmic vinegar (red wine vinegar can be substituted)

Directions:
Directions:
Prepare greens by rinsing and then removing the large central stem. Cut the leaves cross wise into strips.

Render the bacon until crisp in a large stock pot. Add the onion and cook until clear. Spinkle the greens with salt and add to the pot along with the water. Cover and cook until the greens are tender. Remove from the heat and add the basalmic vinegar. Serve immediately.
