2 lbs. heirloom tomatoes, choose any variety
1 clove garlic, pressed
1/8 c. vinegar
1/4 c. olive oil
salt & pepper to taste

Directions:
Slice tomatoes into 1/4 inch thick rounds, arrange on plate or platter.

Swirl rest of ingredients together and pour gently over tomatoes.

Optional: Scatter chives, dill, chopped basil or thyme over entire platter. Serve at room temperature.
