1 Cup Oil
1 1/4 Cup Sugar
3 Eggs
1 Tsp Vanilla
2 Cups Grated Carrots
1 Can (14 oz) Crushed Pineapple, drained
1 Cup Shredded Coconut
2 1/4 Cups Flour
2 Tsp Baking Soda
2 Tsp Cinnamon
1 Tsp Baking Powder
1 Tsp Salt
1/2 Cup Raisins

Directions:
Directions:
Preheat oven to 350ºF. Mix oil and sugar. Beat in eggs one at a time. Mix in vanilla, carrots, pineapple and coconut. Fold in sifted dry ingredients. Fold in raisins. Mix together until well blended. Bake for 40-45 minutes in a 9x13 pan. Ice with you favorite cream cheese frosting.
