3-4 lbs chicken boneless skinless chicken breast
2 tbsp. butter
3 inch piece of orange zest
2/3 cup cherry preserves
2 tbsp. lemon juice
2 tsp. cornstarch
1/8 tsp. cinnamon

Directions:
Directions:
Rub chicken with orange zest; use the rest of the orange for decorating the casserole when served; Mix together cherry preserve, lemon juice, cornstarch and cinnamon; Do not over cook chicken when browning; put in flat baking dish; use same skillet for sauce as you did to brown chicken; put cherry preserves mixture in skillet and cook slightly thickening; spoon over chicken breasts. Heat oven 375 º F and bake chicken about 10 minutes or until done.

This recipe was found written in Grandma Anna Ready's handwriting. Her daughter Evelyn's name was written at the top. She must have liked it and passed it on to Grandma Clara Ready because it was found among her recipes.
