½ cup butter, softened
½ cup peanut butter
½ cup sugar
½ cup brown sugar, firmly packed
1 egg
½ teaspoon vanilla
1¼ cups sifted flour
¾ teaspoon baking soda
½ teaspoon salt
1 package miniature peanut butter cups


Directions:

Preheat oven to 375º.

In a large bowl, cream together butter, peanut butter and sugars. Beat in egg and vanilla.

Sift together flour, baking soda and salt. Gradually add the dry ingredients to the creamed mixture and mix together to form soft dough.

Shape into 1-inch balls and place in 1 ½ inch muffin tins.

Bake 8-10 minutes or until lightly browned. Remove from oven and gently press a peanut butter cup into each cookie so only the top of the candy shows. Let cookies cool in the muffin pan for 10 minutes before removing them.
