2/3 cup Pumpkin
1 cup Sugar
3 Eggs
3/4 cup Self Rising Flour
1/2 tsp Cinnamon
1 tsp Baking Soda
FILLING
1 cup Powdered Sugar
8 oz. Cream Cheese
2 Tbsp Butter (softened)
3/4 tsp Vanilla

Directions:
Directions:
Pre-heat oven to 350º. Line jelly roll pan or large/deep cookie sheet with wax paper and spray with cooking spray. Mix all cake ingredients, pour into pan and bake for15 minutes. Moisten a clean kitchen towel and flip the cake onto the towel. Remove wax paper and roll cake in towel allow to cool. Unroll, add filling and reroll. Sprinkle top with powdered sugar.
