1 can niblet corn
1 can pinto beans or chili beans
1 can tomatoes (I like diced)
2 cans Campbell’s Minestrone soup
1 can original Rotel
1 lb of hamburger-browned and drained (I use a little more meat)
1 medium onion-chopped
1 medium green pepper-chopped
Salt and pepper to taste

Directions:
Directions:
Cook the onion and green pepper in with the hamburger meat to brown and sauté the onions and green peppers.

Drain the meat and mix with all the cans in a soup pot. No need to drain any of the cans plus may want to add additional water if you like it thinner (I add an additional glass because the juice is soooo good). Bring to boil and simmer for about 45 minutes.

Is quite hot so if you want to eliminate some of the heat, decrease amount of Rotel. If you want to increase the heat, use hot chili beans. Is great with corn bread and even better the next day.
