Ingredients:
Ingredients:
6 spinach tortillas
1/4 lb sliced ham, cut in 1/2 in slices
1/2 of a red, yellow, and/or green pepper, cut in very thin strips
2 -3 oz cheddar cheese, cut in thin strips or grated
8 oz whipped cream cheese

Directions:
Directions:
Spread whipped cream cheese fairly generously over entire tortilla.
Place 2 -3 strips of ham across the tortilla just below the midline (like a belt). You can double the layer of ham, if you like.
Make a line of the pepper strips immediately above and below the ham strip.
Make a line of the cheddar cheese directly above and below the lines of peppers.
Roll up the tortilla tightly and cut into one inch circles/pinwheels.
Stack the circles to make a Christmas tree shape.

Decorate your tree with cranberries or bits of the red, yellow, and green peppers. Tuck sprigs of parsley or rosemary around the base of the tree. Use a small cookie cutter to make a star for your tree from the yellow pepper.

Personal Notes:
Personal Notes:
Be sure to use whipped cream cheese. The regular cream cheese doesn't work.
Try to slice the tortilla into circles/pinwheels of uniform width so you can stack them more easily. If they're uneven you'll have a very wobbly tree.
