4 lbs potatoes
16 oz cheddar cheese
small onion, finely diced
butter
salt and pepper
half and half

Directions:
Directions:
1 - Butter a 7x11 baking dish
2- Finely dice a small onion
3- Grate cheddar cheese
4- Thinly slice potatoes with cuisinart or mandolin
5 - Make a layer with about 1/3 of the sliced potatoes, sprinkle with salt and pepper, sprinkle with small amount of diced onion, cover with about 1/3 of the shredded cheese.
6- Make 3 layers of the potatoes and cheese - adding a little extra cheese to the top layer
7- Pour about 1/4 to 1/2 cup of half and half over top layer of cheese
8- Bake at 375º for about 1 1/2 hours - until nicely browned and bubbly
