2 c. sugar
1 c. shortening
1 c. buttermilk
4 tsp. baking powder
4 eggs (beaten)
1 tsp. baking soda
1/2 tsp. lemon extract
4 c. all purpose flour

Directions:
Directions:
In a large bowl, cream together sugar and shortening. Add buttermilk and beaten eggs, mixing well. Dissolve baking soda in a small (1 tsp.) hot water and beat into mixture.
In a separate bowl, sift together baking powder and flour.
Slowly, in increments, mix together the wet and dry ingredient to form a stiff dough. Add lemon extract and blend together gently.
Drop by scant tablespoonfuls, 2 inches apart onto greased and floured cookie sheet.
Cookies may be toped with sugar, sprinkles, a chocolate kiss, candy, or any other thing you can think of. Bake at 350º for 12 minutes. Cookies will be golden yellow and risen slightly.
Cool briefly on cookie sheet then transfer to cooling rack or waxed paper to cool completely.

This cookie dough can be divided into smaller batches and many mix-ins utilized. Chocolate chips, peppermint candy crushed, nuts or serve plain (John Hamil's favorite).
