3 lbs lean ground beef
1 onion, chopped
2-3 garlic cloves, chopped
1 large can tomato juice
1 tsp hot sauce (more if desired)
3 1/2 tsp chili powder
1 tsp red pepper (if desired)
1 1/2 - 2 tsp ground oregano
1 - 1 1/2 tsp cumin
2 tsp salt

Directions:

Brown ground beef, onion, and garlic together. Drain. Add enough tomato juice to cover in large pan. Add the rest of the ingredients and simmer for 1 hour and 45 minutes. Mix together 2-3 Tbsp flour with a little cool water until smooth. Add to chili to thicken. Great served as Frito Pie with cheese and sour cream.

Note: Cook a day or so earlier and chill before adding your thickener. After chilled, see if you can remove anymore grease from the top. You can also add beans if you desire (beans are not added to real Texas chili - Ha!).
