1/2 cup olive oil
1/2 cup orange juice
1/4 cup cranberry-orange relish
1 small shallot, peeled and finely chopped
2 tbsp balsamic vinegar
1/4 tsp red pepper
1/4 tsp salt
1/4 tsp freshly ground black pepper
1 large jicama, peeled
2 bags mixed salad greens
2 cups sliced fresh strawberries
1/2 cup Craisins, finely chopped
2 cans mandarin oranges, drained

Directions:
Directions:
Process first 8 ingredients in a blender until smooth, stopping to scrape down sides. Cut jicama into 1/4" slices and cut with a star-shaped cutter. Place greens, jicama, strawberries, cranberries, and oranges in a large serving bowl. Drizzle with vinaigrette and gently toss to coat.
