1 cup semi-sweet chocolate chips
1/4 cup butter
1 cup whipping cream
1/2 tbsp. Espresso Instant Coffee
3 egg yolks

Directions:
Melt semi-sweet chocolate chips and butter; Whip cream with espresso coffee. Stir 3 egg yolks with melted chocolate mixture until thick and well blended. Combine whipped coffee cream mixture egg yolk and sugar mixture. Fold chocolate yolk mixture until blended.
Take 1 lb. of Mrs. Fields chocolate chip cookies and grind in food processor. Lay in 10" pie pan and place in 275º F oven for 10 minutes. Lay parchment paper then 9" pie pan on 10" pan and press till binds together. Pour chocolate mocha mix filling into the cooled cookie pie crust.
Topping: Take 2 cups heavy whipping cream and add 1 tbsp sugar, 1 tsp. vanilla, and whip until stiff. Spoon over Pie.
Grate 1/2 cup semi-sweet chocolate chips in food processor and sprinkle over whipping cream peaks. Or Whip 2 cups heavy whipping cream with 2 tbsp. sugar and 1.2 cup fresh squeezed orange juice until stiff. Spoon over pie. garnish with grated orange peel.
