- 1-2 heads of iceberg lettuce (use a second if 5+ people are eating)
- 1 can refried beans
- 1 cup salsa
- 1 cup fat-free Greek yogurt (sour cream substitute)
- 1 cup shredded cheese (or substitute like Daiya)
- Grilled chicken strips (grilled in a LITTLE bit of oil, with garlic, salt and pepper) - aprx. 1 breast/person

Carefully peel the lettuce apart, leaving each leaf in tact to serve as a "wrap" for the food. Put these aside.

Grill the chicken in a pan with VERY LITTLE oil, throw in garlic if you like and salt and pepper. When cooked, throw the strips in a bowl and keep covered until ready to serve.

Heat up a can of refried beans in a pot, then transfer to a bowl.

Put all ingredients in separate bowls/dishes and the headuce wrappers on a plate.

From there it's DIY burrito-style, where everyone fills their lettuce with whatever ingredients they like.

Easy, healthy, fun.

This is a really easy recipe I made up after craving burritos but wanting something low carb, low calorie and gluten-free.

Turns out people love it -- even those without an affinity for healthy cuisine.
