3/4 Cup Oil
1 1/2 Cup Sugar
2 Eggs
2 Cups Grated Carrots
1 (8 oz) Can Crushed Pineapple and Juice
3 Cups Flour
1 Tsp Baking Soda
3 Tsp Cinnamon
1 Tsp Salt
2 Tsp Vanilla
1 Cup Chopped Nuts

Directions:
Directions:
Blend sugar, cooking oil, and carrots. Stir in pineapple, salt, and soda. Add eggs. Beat well. Add flour, cinnamon, vanilla, and nuts; blend well. Bake 1 hour at 350 degrees in greased and floured loaf pans (2).
