1 can (1 pound) salmon
Juice 1 lemon
1 egg, slightly beaten
1 medium onion grated
1/4 tsp. salt
1/4 tsp. pepper
1/2 cup cornmeal
Oil for frying

Directions:
Directions:
Drain salmon. Remove backbone and any other larger bones along with skin. Mix by hand with other ingredients except oil. Shape into patties or croquettes.Fry in deep hot oil untin brown.Drain on paper towels. Serve with sauce.

Sauce:
1/2 c. mayonnaise
1/2 c. sour cream
2 tbsp. drained sweet pickle relish
1 tbsp. prepared mustard
juice 1/2 lemon
1/2 tsp. salt
1/2 tsp. sugar
1/2 tsp. salt
1/2 tsp. red pepper

Mix all ingredients. Makes about 1 1/2 cups.
