1 3/4 cups powdered sugar
2 cups shortening
2 tsp salt
1/2 cup chopped pecans
8 cups cake flour (or 7 cups all purpose flour)
1/2 cup milk
1 1/2 tsp vanilla
3/4 tsp lemon extract
2 eggs
Icing:
1/2 cup vegetable oil
1/2 cup white Karo
2 tbsp water
1/4 tsp red food coloring
1 dash salt
3/4 tsp vanilla
1/2 tsp cherry flavoring

Directions:
Directions:
Mix cookie ingredients into a smooth paste. Divide dough and roll into lengths until it reaches 1' diameter. Cut into 1/4" slices and place on cookie sheet. Make indentations with your thumb in the center of each cookie. Bake at 400º for 10 minutes.
Mix icing ingredients together, and add powdered sugar until it becomes a thick paste. Continue to mix until smooth, then add about 1 Tbsp whipping cream or evaporated milk. Fill indentation in cookies with icing.
