DOUGH
• 2 cups flour
• ½ stick butter
• Pinch of salt
• Variations – ground non-salted, non-roasted nuts.

FILLING
• 1 zucchini
• 1 eggplant
• Mushrooms
• Salt and pepper to taste
• 1 can great northern white beans
• 4 oz. chevre cheese
• 1 egg
• garlic
• Salt and pepper to taste
• ½ lime – juice.

TOPPING – Roasted Red Pepper Coulis
• 2 red peppers
• Ό cup good EVOO
• shallot (a little)
• Ό piece fresh garlic
• salt and pepper to taste

DOUGH
1. Preheat oven to 450 degrees-convection
2. Add all 3 ingredients in a bowl – incorporate with a fork until mealy
3. Add water until it comes together
4. Optional – add ground nuts
5. Knead in the bowl – just a bit, don’t over-knead
6. Shape into flat circle, wrap in plastic wrap and let rest in fridge for 15 minutes
7. Let rest at room temperature for 15 minutes
8. Form to buttered pie pan
9. Blind bake – put tin foil over dough, add brown rice to cover foil. Bake for 10 – 15 minutes.

FILLING
1. Slice zucchini, eggplant and mushrooms into apprx. Ό inch rounds
2. On an oiled sheet pan, add above ingredients and salt and pepper
3. Coat above ingredients with olive oil spray
4. Bake in preheated convection oven for 20 – 30 minutes, until tender
5. In a food processor, combine white beans and chevre
6. Add egg, garlic, salt, pepper and lime juice and mix
7. Add on top of dough.

TOPPING
1. Roast both red peppers over stove top until fully charred
2. Add to bowl and cover with plastic wrap; sweat for 15 minutes
3. Discard charred skin and seeds
4. In a food processor, add all ingredients and blend
5. Add on top of white bean mixture.
