1 hen or 5 chicken breast or 8 or 9 chicken tenders
1 medium onion chopped
1 cup of diced celery
1 cup of diced green pepper
2 cans of tomatoes or 2 large cans of tomatoe sauce
1 can of tomatoe paste
2 cans of English peas (undrained)
1 package of spaghetti
3 cups grated sharp cheese
1 teaspoon of seasoning salt
salt and pepper to taste
2 teasposns hot sauce or more to suit taste (optional)
other seasongings to taste

Boil chicken until tender in large heavy pot.

While chicken is cooking, saute celery, onions and bell pepper in a little butter or vegetable oil.

When chicken is done remove fromn broth and add spaghetti. Add additional broth or water if needed. When spaghetti is done, add peppers, onions and celery. Add english peas. Add tomatoe sauce and paste. Add seasoning salt, garlic salt and other seasonings to taste. Add hot sauce if desired. Add cut up chicken back to mixture. Stir well adding additional water or broth as needed.

Just prior to serving, add 2 cups or more of sharp chedder cheese. Stir well and let simmer for about 10 minutes. Stir continously or it will stick.

This makes a big pot and is good for a crowd. This dish is one that is just as good or better as leftovers. It freezes well. Just add a small amount of water before defrosting. I put a pound of cheese in mine. You can play around with the seasonings to suit your taste.

Serve with bread that has been buttered and seasoning salt, and toast it.
