8 cups sliced/chopped zucchini squash
2 cups sliced/chopped onions
2 cups sliced/chopped bell peppers
1 large jar sliced pimento
hot pepper may be added to taste
2/3 cup salt
water

Syrup:
3 cups sugar
2 cups apple cider vinegar
2 tablespoons mustard seed

Directions:
Directions:
Soak squash, onions and peppers in 3 quarts water and 2/3 cup salt for 1 hour. Drain.

Bring syrup to boil. Add vegetables & bring to boil -
BUT DO NOT COOK !! Allow veggies to soften and remove from heat.

Seal in sterilized jars.

Use with meat dishes as a relish - delicious !!
