2 cups cubed eggplant
1/2 cup chopped celery
1/2 cup chopped onion
1/4 cup chopped bell pepper
1 lb ground beef
1/4 cup margarine or butter
1/2 tsp salt
1/4 tsp black pepper
1 can tomatoes

Directions:
Directions:
Soak eggplant in salt water for 10 minutes. Sauté onion, celery, and pepper in margarine. Brown meat. Drain eggplant and combine all ingredients together. Cook over medium heat 20-25 minutes.
