3/4 lb ground beef
1 medium onion, chopped
1 lb cheddar cheese, grated
4 medium jalapenos, chopped (optional)
1 small can green chilies
17 oz can creamed corn
1 cup cornmeal
1 cup milk
1/4 cup oil
2 eggs, beaten
1/2 tsp baking soda

Directions:
Directions:
Brown meat and drain. Combine cornmeal, milk, eggs, oil, baking soda and corn. Pour 1/2 of this mixture into a greased 9x9 baking dish. Sprinkle browned meat over this. Sprinkle the onion, green chilies and chopped jalapenos over the meat. Sprinkle the grated cheese on top of the onions and chilies, then pour the remainder of the cornbread mixture on top. Bake uncovered at 350º for 45 minutes - 1 hour, or until golden brown.
