Chuck, shoulder or 7-bone roast
salt, pepper, flour

Directions:
Directions:
Salt, pepper and flour roast on all sides. Brown on all sides in hot oil in skillet, then place in baking pan. Add water to 1/2 the depth of the roast. Cook, uncovered, at 350º. Turn when sufficiently browned, adding water as necessary. If meat gets too brown, lay a piece of foil on it. Cook until tender. Remove meat form pan. Add flour and water to thicken gravy.
