3 lb boneless pork loin
1 tbsp lemon peel
2 tbsp rosemary leaves
1/2 tsp thyme leaves
1/2 tsp salt
1/2 tsp coarse ground pepper
4 large garlic cloves, peeled and finely chopped

Directions:
Directions:
Preheat oven to 350º. Place pork loin in foil-lined shallow roasting pan. Combine the rest of the ingredients and rub on all sides of the pork loin. Bake uncovered for 1 hour (20-25 minutes per pound). Use a quick-response meat thermometer inserted into the center of the roast. The temp should be at least 160º. Remove from oven and let stand 10 minutes before slicing.
