2 cups soup mix*
2 qts water
1 lb country ham, diced
1 large onion, chopped
1 clove garlic, minced
1 can Rotel tomatoes

Directions:
Directions:
Place beans & water in Dutch oven. Bring to boil, and boil rapidly for 5 minutes. Cover, turn off heat & let stand for 1 hour. Bring to boil again. Add ham, onion & garlic. Reduce heat and simmer 1-2 hours, or until beans are tender. Add tomatoes and simmer 30 minutes. Serve with cornbread and fresh onions.

*Soup mix: Choose nine of the following: (Use 1 lb pkgs) lentils, black beans, navy beans, split peas, kidney beans, pinto beans, black-eyed peas, northern white beans, cranberry beans, baby lima beans, and barley. Sort and remove rocks and dirt. Mix well and store in large container.
