1 gallon milk
2 tsp citric acid
¼ tablet of rennet dissolved in ¼ cup cool water
2 tsp cheese salt

Directions:
Pour milk into a large steel pot, add citric acid. Heat over medium heat, stirring constantly until it reaches 88 degrees. Slowly stir in rennet mixture. Heat to 102 degrees. Remove curd with a slotted spoon into a microwaveable bowl. Press out as much liquid as possible. Microwave for 1 minute, and drain more whey. Stir in cheese salt. Microwave for 30 seconds, then pull and stretch cheese until it gets smooth, shiny and stretchy. Microwave for another 30 seconds, pull and stretch, and then mold as desired. (May need to wear rubber gloves as cheese gets very hot)
