1 cup sugar
½ cup brown sugar
½ cup light corn syrup
½ cup heavy cream
½ cup milk
½ cup butter
1 Tbsp vanilla
8 oz whole pecans
16 oz milk chocolate
1 Tbsp peanut oil

Directions:
Directions:
Combine sugars, corn syrup, cream, milk, and butter. Cook slowly stirring until firm ball stage (248 degrees.) Remove from heat, add vanilla. Let cool for 15 minutes. Drop by tablespoonfuls onto wax paper. Poke about 6 pecans into the sides of each blob of caramel. Let cool completely. Put in freezer for 1 hour. Melt chocolate together with oil. Using tongs, dip caramel blobs quickly into melted chocolate. Let excess chocolate drip off. Place on wax paper and let cool.
