1/4 cup flour
2 tsp salt
2 tsp paprika
1/2 tsp pepper
1 lb round steak-cut in serving pieces
1 clove garlic, cut in half
2 large onions, sliced
1/3 cup shortening
1/2 cup uncooked rice
2 cups canned or cooked tomatoes
2 cups hot water

Directions:

Mix flour, salt, paprika, and pepper.
Rub steak with garlic.
Roll steak in seasoned flour.
Brown onions slightly in melted shortening
Remove onions, Sear meat quickly on both sides.
Place meat in greased casserole, Place onions,rice and tomatoes top of meat.
Add remainder of flour mixture to shortening in skillet, blend. Add hot water gradually-cook until smooth.
Strain over meat, onions, rice and tomatoes in casserole dish.
Cook, covered, in moderate, 350º oven, for 11/2 hours or until meat is tender.
