1 lb. mild sausage
6 tbsp. unsalted butter
1 lb. country white sandwich bread
1 large cooking apple, such as Golden Delicious or Gravenstein
1 medium onion
2 ribs celery with leaves
1/2 cup dried apricots (chopped)
Handful fresh parsley leaves
1/2 cup dried cranberries
2 to 3 sprigs fresh thyme
1/2 tsp. kosher salt
3 cups chicken broth
1 large egg
2 tbsp. melted butter

Preheat oven to 325 degrees F. Butter a shallow 3-quart casserole dish.

Cut or tear bread into bite-size pieces and lay in a single layer on 1 or 2 baking sheets. Bake for approx. 15 to 20 minutes or until slightly dry and crisp. Set aside to cool.

Peel, core and coarsely chop the apple. Coarsely chop the celery and apricots. Mince onion and parsley.

Brown the sausage and remove from the skillet. Cook the apple, onion, celery, apricots, cranberries, thyme, and salt in the residual fat until soft, approx. 5 minutes. Add the chicken broth and parsley, bring to a boil, and then remove from the heat.

Beat the egg in a large bowl. Add the bread, sausage, onion/fruit mixture and toss until evenly moistened.

Loosely pack into the prepared pan and bake, uncovered, until the top is crusty (approx. 40 minutes). Drizzle the pan with the melted butter and cook for another 20 minutes or until the top is crisp and golden.
