3 lg yellow squash
¼ lb. hot bulk sausage
¼ cup green pepper, chopped
¼ cup orange pepper, chopped
¼ cup onion, chopped
1 medium roma tomato, chopped
½ cup grated Parmesan cheese
½ cup mozzarella cheese, shredded

Cut squash in half lengthwise. Scoop out seeds; discard, leaving ¼ inch thick shell. Set aside. In 1 ½ quart casserole, combine sausage, onion and green pepper. Cover. Microwave at medium high (7) 4-5 minutes until sausage is brown; stir every 2 minutes. Drain. Add tomato and Parmesan cheese. Stir until well blended.
Spoon mixture evenly into squash shells; place squash in 2 quart oblong glass baking dish. Cover with wax paper. Microwave at high 12-15 minutes until squash is tender. Sprinkle with mozzarella cheese. Microwave at high 1-2 minutes until cheese is melted.
Total microwave cooking time 17-22 minutes.
