3 pound fresh mushrooms
1/2 c. butter
1/2 medium onion, diced
1 tsp. minced garlic
1/2 c. + 2 Tbs. flour
8 c. chicken broth
2 cups light cream or half n half
1 tsp. salt
pepper to taste
1/2 tsp. white pepper
few squirts of lemon

Directions:
Directions:
Thinly slice mushrooms and saute in butter, along with the onion, garlic and seasonings. Add flour and cook stirring for 1 minute.
Remove from from heat and add the broth, stirring continuously. Return to the heat and bring to a boil, stirring. Reduce the heat and simmer gently for 2 minutes, stirring occasionally.
Whisk the cream into the soup, then reheat gently, stirring. Season to taste with salt and pepper. Garnish with chopped chives and thyme if desired.
