1 kg potatoes, butter and cream for mashing
Olive oil
1 Leek, diced
1/2 Red pepper, diced
2 cups raw spinach
150 gm old cheddar cheese
zest and juice of 1 lemon
1 tin cream of mushroom soup
1/2 cup sour cream
Italian parsley, finely chopped
small piece of salmon, skin off and bones removed
small piece of halibut, skin off and bones removed
125 gm large prawns, raw and peeled
125 gm raw scallops

Directions:
Preheat oven to 400F.

Peel and cook potatoes in a large pan of salted water. Cook until soft and then mash with butter and cream or milk.

Meanwhile, saute leek and red pepper in olive oil for a few minutes until soft, do not brown. Add spinach and stir until wilted. Remove from heat.

Cut the salmon and halibut into small bite-size chunks and add to a casserole dish with prawns and scallops. Drizzle with a little olive oil and the juice of the lemon. Add a good pinch of salt and pepper.

Add vegetable saute mixture to casserole. Mix mushroom soup, sour cream, lemon zest and cheese together. Spread over seafood and vegetables in casserole dish. Top with mashed potatoes.

Bake in preheated oven for approx 40 minutes until bubbling and crispy and golden on top.
