Soup Greens:
1 Parsnip, peeled
1 Leek, washed, ends cut off
1 Parsley Root, peeled
1 Onion, peeled
1 Carrot, peeled
1 Celery Stalk, washed, cut into thirds
1 Bay leaf
Salt and Pepper to taste

5 LB. Bag of Yukon Gold Potatoes, peeled and cut into 1 inch cubes
2 Onions Chopped and Diced

Fill a Soup Pot halfway with water. Add salt and pepper to taste. Add soup greens. Add peeled potatoes to pot. Boil all ingredients until potatoes are soft. Discard soup greens.

While the soup is boiling. Brown diced onion is a small amount of butter or olive oil. Once the onions are brown and the soup greens have been discarded, add browned onions to soup. Season to taste. Serve.
