*1 lb. lump crab meat
1 large egg
**10 saltines mashed
1 tsp. old bay seasoning
1 T. prepared regular yellow mustard
4 T. mayonnaise

peanut or olive oil

* Find in the refrigerated section of the seafood department in Costco or grocery store.
** to make gluten free version, use Glutino's original Gluten Free crackers.

Remove all cartilage from crab meat by gently checking for shells that may have been overlooked when the crab meat was hand packed into the can. Put crab meat in a medium sized bowl and add the mashed crackers. Beat the egg in a medium sized measuring cup (2-cup). Add the mustard, mayonnaise, old bay seasoning to the egg and mix together. Then add this mixure to the crab meat and crackers and blend well. Shape the crab mixture into 8 crab cakes.

Add enough oil to a large non-stick frying pan to sparingly coat the bottom of the pan. Heat the oil and then add the crab cakes. Cook about 10 minutes per side--until the bottoms and tops of the crab cakes are brown and they are warmed throughout.
