FOR THE SALAD-
5 c bite size romaine lettuce
5 c bite size iceberg lettuce
1 small red onion, peeled and thinly sliced
4 ounces bleu cheese, crumbled
4 ounces thinly sliced prosciutto
1 avocado, diced

FOR THE DRESSING-
1 T Dijon Mustard
2 tsp granulated sugar
1/4 c water
1 T minced fresh garlic
1/3 c red wine vinegar
1/4 T salt
1 1/4 c vegetable oil
fresh ground black pepper to taste
1 pinch dried oregano
1 pinch red pepper flakes

Carefully toast the prosciutto in a toaster oven until crisp. Cool and crumble. Set aside

For the dressing, in a medium mixing bowl or blender combine mustard, sugar, water, garlic, vinegar and salt. Whisk or blend until combined. Whisk or blend the oil in thin stream. Add pepper, oregano and red pepper flakes to combine. Adjust seasoning if necessary, adding sugar or salt to taste.

Place lettuce, onion, cheese, avocado and prosciutto in large bowl, toss. Add enough dressing to lightly coat leaves, toss and serve immediately.

Refrigerate extra dressing in airtight container for future use.
