Grandma's Jell-O Recipe

1 can pitted olives, 6 ounces or more
1 jar pimientos 3-4 ounces
3 packages lime gelatin, 3 ounces each
3/4 cup chopped walnuts
6 tbsp. vinegar (2 tbsp. per 3 ounces package of gelatin)

Sliced olives thin. Cut pimientos in tiny chunks. Chopped walnuts medium course. Make lime gelatin as directed, add the vinegar while hot. Wait until gelatin cools or use the quick set (ice and water to set faster). When gelatin is almost set then add olives, pimientos and nuts. Pour into a glass bowl approximately 11 3/4 X 7 1/2 X 1 3/4 or individual molds.

This recipe came about in 1945 after WWII. Not sure if this is her original recipe. It has been a family recipe since. When ever we are at Grandma’s house you can be sure this Jell-O is a part of her family dinner meals.
