• 1/2 Cup Roasted Pumpkin Seeds
• 1/2 cup Dried Cranberries
• 1/2 cup Celery, Diced
• 3 cups Chicken, Cooked and Diced
• 1 Tbl Red Wine Vinegar
• 1 clove Minced Garlic
• 1/2 Tbl Dijon Mustard + 2 T. dry mustard
• 1/2 cup Mayonnaise (or substitute part or all w/plain Greek yogurt)
• 1 Tbl Parsley Chopped
• 1 Tbl Fresh Thyme Chopped
• 1Tbl Olive Oil
• Salt and Pepper to taste

Directions:
Directions:
Mix mayonnaise, mustards, oil and vinegar to create dressing. Mix dressing with remaining ingredients. Season to taste. Refrigerate.
