1 1/4 c. whole wheat flour
1 c. sugar
1/4 c. natural bran
1 tsp. ground ginger
3/4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1/2 c. oil
1 c. cooked rhubarb
1/2 c. nuts, chopped
1/4 c. crystallized ginger

Directions:
Directions:
Preheat oven to 375 F.

Mix together flour, 1/2 cup of sugar, bran, ginger, baking powder soda and salt. Make a well in the center. Add eggs and oil. Beat well. Mix together rhubarb, 1/2 cup of sugar, nuts and crystallized ginger. Fold into batter.

Fill muffin cup 3/4 full. Bake 25 - 30 minutes until tops spring back when touched. Makes 12 - 14 large muffins.
