2 pounds lean ground beef
1 can 46 ounce tomato juice
1 can 29 ounce tomato sauce
1 1/2 cups chopped onion
1/2 cup chopped celery
1/4 cup chopped green pepper
1/4 chili powder
2 tsp ground cumin
1 1/2 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried oregano
1/8 tsp cayenne pepper
2 cups canned red beans, drained and rinsed

Cook ground beef, drain and crumble. Add all the ingredients to a large kettle. Bring to a boil. Reduce heat and simmer for 1 to 1 1/2 hours, stirring occasionally.

Use with crackers, pan of cornbread, sprinkle cheese and/or ketchup on top. Freeze leftovers in ziplock bags for a quick lunch treat !

Be sure to cut back on the chili powder AND cayenne pepper if you are a "greengo". I was on a chili cooking team in Odessa and used a recipe like this. Course we lost, but had a great time cooking all day at the County Fair. There's not a lot to do in Odessa..... I also entered the Chili Pepper eating contest. I might have won too, but I doctored myself to get ready and that made me sick...a bottle of pepto bismol, a pkg. of tums, 5 ice cream bars, and quart of milk.
