12 Rome apples
12 Golden Delicious apples
1/4 cup red hot candies
1 cup granulated sugar
Orange juice

Directions:
Thoroughly wash apples and cut into quarters, removing seeds. Place the quartered apples in a large sauce pan and cover with water. Cook the apples until soft and transfer by small batches to a food mill which is placed over a large bowl. Process the apples and remove skins as needed. Add more apples and apple broth and continue to process in the food mill. Add red hots to processed apples while mixture is hot. Add sugar to taste (the tasting process is the best part). Add enough orange juice to give the applesauce extra flavor, usually about 1/4 cup. Stir well to incorporate the sugar, red hots and orange juice with the apple mixture.

This can be frozen in small batches. You can make this as thick or thin depending on your taste just by adding additional orange juice or by doing less grinding in the food mill.
