1 cup butter - softened
3/4 cup superfine confectioner's sugar
1 1/2 cup flour
1/2 cup cornstarch
1 tsp vanilla

Directions:
Directions:
Preheat oven to 350º.
Cream butter with sugar until fluffy. Beat in vanilla. Sift flour with cornstarch and add to butter. Beat until well-blended, taking care not to overbeat.
Flour hands and pat dough into pan. Prick dough all over. Bake 40 - 45 minutes until pale golden brown. Cool shortbread in pan 20 minutes before cutting.

This makes a very fine textured shortbread - I guess because of the cornstarch and confectioner's sugar. I like this recipe better than the other shortbread recipe I put in this book - but they're both good. I just couldn't find this one until right before we printed the book!
