3 peppers (1 orange, 1 yellow, 1 red) cut into 1/4" dice
1 can black beans, rinsed and drained
1 can shoepeg corn, drained
1/3 cup sugar
1/3 cup oil
1/3 cup vinegar (fancy flavored ones are good!)

Directions:
Directions:
mix sugar, oil, vinegar, stir til sugar is dissolved. Add rest of ingredients, toss to coat.

This improves with age, best if prepared a day ahead.

Serve with "scoop" style corn chips as an appetizer or side dish.
