1 lb. carrots, peeled & bias cut
1/8 cup apple cider
1/8 cup light brown sugar
1/4 teaspoon pumpkin pie spice
1/8 teaspoon chili powder
1 tablespoon butter
1/8 teaspoon pepper
1/8 teaspoon salt
Salt and freshly ground black pepper
1 tablespoon parsley, chopped

Directions:
Directions:
In pot of salted water add carrots. Boil over medium heat. Cook for 4 minutes. Drain carrots. Set aside.

In pot combine all the remaining ingredients, except parsley. Simmer on low heat. Add carrots. Simmer 5 minutes tossing lightly. Remove from heat. Toss in parsley. Serve.
