1 1/2 pounds ground beef
1 small onion, chopped
1 (10 3/4 ounce) can condensed cream of celery soup
1 (10 3/4 ounce) can condensed cream of potato soup
1 (8 ounce) can sliced water chestnuts
1 (8 ounce) can sliced bamboo shoots
1/2 cup cooked pea pods (optional)
2 teaspoons soy sauce
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1 (6 ounce) bag crispy chow mein noodles

Directions:
Directions:
Preheat oven to 350º. Grease baking dish with butter.

In skillet, brown ground beef and onion; drain. Stir soups into beef. Add water chestnuts, bamboo shoots, pea pods, if desired, soy sauce, garlic powder and pepper; mix lightly.

Place chow mein noodles into baking dish; add beef mixture and toss to combine. Bake about 30 minutes or until bubbly. Serve on rice, if you like. Serves 4-6.

This was my mom's special dish for International Night. Bamboo shoots, water chestnuts, and best of all, chow mein noodles on top! We rarely went out to restaurants for dinner, but this was our brush with the exotic.
