"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Sponge ingredients:
3 cakes dry yeast
1 can condensed milk
3/4 c. white sugar
4 c. hot water
2 c. flour
Additional ingredients:
3/4 c. oil
2 tbsp. salt
2 tbsp. cinnamon
1 tsp. nutmeg
4 eggs beaten, brought to room temperature
flour

Directions:
Directions:
Start by making the sponge. Mix the condensed milk and water, then add the yeast and sugar. With a mixer, beat the flour in until the mixture is smooth. Set in a warm place (an oven or microwave is good) until the sponge is very bubbly.
Add the oil, salt, cinnamon, nutmeg and eggs and enough flour to make a soft dough, about 6 cups or more if needed. Set in a warm place until it has risen to about twice the original size. This usually takes 60 to 90 minutes.. Punch the dough down.

For nut bread: break off enough dough to half fill your bread pan. Roll out the dough to about 1/4 inch and spread with margarine, sprinkle cinnamon and nutmeg, if desired, a generous amount of brown sugar and nuts or raisins. Roll up, turning both ends under and place in a greased bread pan. Prick the top about 10 times with a fork and let rise until double in bulk. Bake at 350º for 45 to 60 minutes depending on size of pan. Test by rapping top of loaf - if it sounds hollow, it is done].
For Cinnamon rolls or sticky buns: Roll dough to about 3/4 inch, spread with margarine, cinnamon, nutmeg, brown sugar and nuts. Be generous with brown sugar and margarine. Cut in 3/4-inch slices and place on greased cookie sheet or deeper pan. Let rise until about double in bulk. Bake at 350º for 30 minutes and turn out of the pan immediately.

Personal Notes:
My grandmother Nettie Welch made fantastic bread and rolls. One of my favorite memories is watching her punch down the dough and the warm sweet taste of these sticky buns when they come out of the oven.
