12 eggs
1/3 c. mayonnaise
1 tsp. Dijon or yellow mustard
3 tsp. dry ranch dressing mix, optional

salt and pepper to taste

Directions:
In large pot, place eggs in single layer, adding cold water to cover by 1 inch. Cover; heat to boiling. Remove from heat; let stand covered 15 minutes. Drain. Immediately place eggs in cold water until cooled, to prevent green ring around yolk. Remove shell while eggs are still warm, to peel easily and keep cooked egg white smooth.

Cut eggs lengthwise in half, after they are peeled. Remove yolks to a small bowl and mash with fork. Stir in mayonnaise, mustard and salt/pepper to taste. If desired, add ranch dressing for stronger flavor.

Spoon or pipe filling into egg white halves. Cover with saran and refrigerate until serving time.
